Protein Rice Pudding
Creamy warm protein rice pudding with fresh peaches. More healthy and high‑protein recipes are available on Spoonsparrow!
Ingredients
- 1 vanilla pod
- 3 sprigs thyme
- 300 g rice pudding grains
- 1200 ml milk
- 6 tbsp agave nectar
- 2 peaches
- 1 tsp coconut oil
- 100 g low‑fat quark
Instructions

Split the vanilla pod lengthwise and scrape out the seeds with a knife. Wash the thyme and shake off excess water.

Add the vanilla seeds, rice, milk, 4 tbsp agave nectar, and thyme sprigs to a pot and bring to a boil. Simmer for about 25 minutes over medium heat, stirring occasionally.

Wash the peaches, dry them, halve them, and remove the pits. Slice the peaches thinly. Heat coconut oil in a pan and steam the peach slices for 3 minutes over medium heat.

Just before the rice pudding finishes cooking, remove the thyme sprigs and stir in the quark. Divide the protein rice pudding into bowls, top with sautéed peaches, drizzle remaining agave nectar, and garnish with fresh thyme.
