Ingredients

  • 1 kg potatoes
  • 150 g mixed herbs (e.g., dill, chervil, borage, parsley, chives, sorrel… )
  • 1 onion
  • 4 egg yolks
  • 300 g whipping cream
  • 300 g yogurt
  • 1 tbsp Lemon Juice
  • Salt
  • Pepper (freshly ground)
  • 1 romaine lettuce
  • edible flowers (borage, sage… )
  • chive rolls
  • egg yolk (cooked, chopped)

Instructions

    Brush potatoes thoroughly under running water. Then boil in salted water for about 35 minutes.

    In the meantime wash herbs, shake dry and finely chop. Peel and finely chop onion. Mash egg yolks with a fork and mix with sour cream and yogurt. Add herbs and onion, season with lemon juice, salt and pepper.

    Separate lettuce into leaves, clean, rinse, spin dry and cut into strips.

    Drain potatoes, briefly cool, peel and arrange on plates with herb sauce and salad; optionally garnish with edible flowers, chive rolls and egg yolk.
