Potato Vegetable Soup

Potato-vegetable soup with smoked pork and horseradish: complex carbohydrates and easily digestible protein are distributed favorably in the soup.

Ingredients

  • 500 ml classic vegetable broth
  • 300 g large waxy potatoes (3 large waxy potatoes)
  • 1 tbsp Rapeseed Oil
  • 300 g mixed soup vegetables (frozen)
  • 1 piece fresh horseradish (about 3 cm)
  • 0.5 bunch Chives
  • 150 g chicken smoked pork (boneless)
  • Salt
  • Pepper

Instructions

    Bring broth to a boil. Peel potatoes and cut into about 1.5 cm cubes.

    Heat oil in a pot. Sauté the potatoes with the soup vegetables for 2-3 minutes. Add boiling broth, bring to a boil, then simmer for 10 minutes over medium heat.

    Meanwhile, peel and finely grate horseradish; wash chives, shake dry, and cut into fine ribbons. Cut smoked pork into 1 cm cubes. Add pork to the simmering potato soup and cook for another 3 minutes. Season with salt and pepper. Serve the potato vegetable soup sprinkled with horseradish and chives.
