- 500 g Potatoes
- 500 g swede
- 4 Stalks Parsley
- Salt
- Pepper (freshly ground)
- olive oil (cold‑pressed)
- 1 white onion
- 1 Garlic clove
- 1 piece ginger (2 cm)

Peel the potatoes and swede and cut them into small cubes. Peel and finely chop the onion. Peel and halve the garlic. Peel and finely chop the ginger. Heat 1 tablespoon butter in a pot and sauté the onion and garlic. Add the remaining vegetables and ginger, sauté briefly, then pour enough hot water to almost cover the vegetables.

Add the parsley whole to the liquid. Season with salt and bring to a boil, then reduce heat, cover, and simmer gently for 25‑30 minutes. Remove the cooked parsley, season with salt and pepper, stir in 1–2 tablespoons cold olive oil, and serve immediately. Serve with toasted bread.
