Ingredients
- 1 kg boiled starchy potatoes
- 150 g semolina
- Salt
- 200 g quark (fresh cheese)
- 2 Eggs
- butter for frying

Peel the potatoes and grate them finely. Mix thoroughly with the semolina, a pinch of salt, the quark, and the egg; let the dough rest for about 15 minutes.

Heat butter in a large skillet (or two smaller ones). Pour the potato dough into the pan to form discs about 1 cm thick and cook over medium heat for about 10 minutes until the bottom is browned. Flip and cook for another few minutes.

Break the fritters into pieces with two forks, stirring constantly to crisp them all around. Add more butter if needed. Serve with apple sauce.
