Potato Rösti with Herring

- 4 large boiling potatoes
- 4 herring fillets
- 0.5 tsp paprika powder
- 1 tbsp butter
- 50 g starch
- Salt
- ground pepper
- 1 tbsp Lemon Juice
- butter for frying
- 2 cucumbers
- 2 tbsp butter
- 150 g crème fraîche
- 2 tbsp lemon juice
- 0.5 tsp ground coriander
- 2 tbsp chopped parsley
- coriander leaves for garnish

Peel, wash, and grate the potatoes coarsely; squeeze out excess moisture, place in a bowl, and season with salt and pepper. Cut the herring into pieces and add to the grated potatoes. Add starch, paprika, and 1 tbsp butter, mixing well. Season again with salt, pepper, and a splash of lemon juice. In a pan, fry portions of 8 small rösti, sprinkle with pepper, and keep warm in the oven.

Peel the cucumbers and dice them finely. Sauté in hot butter, then add crème fraîche, lemon juice, coriander, parsley, and pepper, letting everything thicken into a creamy sauce. Plate the rösti with the sauce and garnish with coriander leaves.
