Potato Onion Stew with Basil

Ingredients

  • 4 red onions
  • 1 kg waxy potatoes
  • 2 tbsp olive oil
  • Salt
  • Pepper (freshly ground)
  • 1 bay leaf
  • 400 ml Vegetable broth
  • 2 tbsp freshly chopped basil

Instructions

    Peel the onions, cut them lengthwise in half and slice into wedges. Peel the potatoes and cut into large cubes. Heat the oil in a pot, sauté the onions and potatoes until lightly browned. Season with salt and pepper, add the bay leaf. Pour in the vegetable broth, cover and simmer for about 20 minutes.
