Potato Marmalade

Ingredients

  • 400 g tart apples
  • 400 g waxy potatoes
  • 1 lemon
  • 1 vanilla pod
  • 0.5 l apple juice
  • 500 g gelatin sugar from raw cane sugar (2:1)

Instructions

    Peel the apples, remove cores and grate the flesh finely. Peel the potatoes and grate them finely as well. Squeeze the lemon and combine its juice with the apple and potato grates in a pot. Split the vanilla pod lengthwise, scrape out the seeds and mix them together with the pod and the apple juice.

    Bring to a boil while stirring. Let it simmer for about 5 minutes, add the sugar and continue boiling for another 4 minutes, then perform a gel test.

    Remove the pod again, pour the marmalade into prepared jars and seal tightly. Leave the jars upside down for 10 minutes, then flip them over and let cool.
