This simple recipe shows how to make creamy potato gnocchi topped with a fragrant white wine saffron sauce.

Ingredients
- 2 shallots
- 1 Garlic clove
- 1 tsp saffron strands
- 100 ml White wine
- 200 ml vegetable stock
- 50 ml heavy cream
- 1 very fresh egg yolk
- 1 tbsp butter (in pieces)
- Salt
- white pepper
- Lemon juice
- 500 g gnocchi (frozen)
- pepper (ground or cayenne pepper)
- saffron strands (for garnish)

Peel and finely chop the shallots and garlic. Mix white wine with the shallots and saffron strands, reducing to about 2 tbsp. Add vegetable stock and reduce to about 125 ml. Strain through a sieve. Whisk cream with the egg yolk and fold into the sauce. Add butter pieces and blend until smooth. Season with salt, pepper, and lemon juice.

Cook gnocchi in boiling salted water according to package instructions, drain, place in warmed bowls, and pour over the saffron sauce. Sprinkle with pepper or cayenne pepper, garnish with saffron strands, and serve immediately.
