Ingredients

  • 600 g cooked new potatoes
  • 250 g chorizo
  • 2 tbsp olive oil
  • 8 eggs
  • 50 ml whipping cream
  • 1 tbsp freshly chopped rosemary
  • Salt
  • Pepper (freshly ground)
  • Nutmeg (freshly grated)
  • parsley (for garnish)

Instructions

    Preheat the oven to 180°C fan or conventional heat.

    Peel and cut the potatoes into pieces as desired. Slice the chorizo and fry in hot oil in a pan for 1-2 minutes; add the potatoes and cook for another 2-3 minutes.

    Whisk the eggs with cream and rosemary, season with salt, pepper and nutmeg. Pour over the chorizo‑potato mixture and bake in the oven for about 20 minutes until golden brown.

    Serve garnished with parsley.
