Ingredients

  • 1 kg starchy potatoes
  • Salt
  • 2 slices of toast bread (or white bread)
  • 1 Tbsp clarified butter
  • 1 egg
  • nutmeg
  • 100 g flour
  • fresh chopped parsley

Instructions

    Peel the potatoes and simmer in salted water for about 30 minutes until tender.

    Drain the toast bread, cut into small cubes, and roast them in hot clarified butter for 2-3 minutes until golden brown and crisp. Drain on paper towels.

    Drain the cooked potatoes and let them steam dry. Pass them through a potato ricer. Add the egg, season with salt and nutmeg, mix well, then knead in the flour to form a smooth dough. Adjust flour amount slightly if needed.

    Take small portions of dough, shape into flat discs, fill each disc with a few croutons, and roll into dumplings.

    Drop the formed dumplings into boiling salted water and let them cook for about 20 minutes on low heat until done.

    Remove with a slotted spoon and serve garnished with parsley as desired.
