- 800 g waxy potatoes
- Salt
- 1 cucumber
- a handful of parsley
- 30 g chives (with flowers)
- 3 spring onions
- 1 Garlic clove
- 200 g yogurt
- 3 tbsp vegetable broth
- 0.5 untreated lemon (zest and juice)
- a pinch of sugar
- pepper (ground)
Instructions

Peel, wash, and cut the potatoes into wedges. Boil in salted water for about 20 minutes until tender. Drain, let cool.

Wash the cucumber, quarter lengthwise, remove seeds, and slice. Rinse herbs and pat dry. Set chives flowers aside for garnish. Roughly chop parsley. Cut chives into 3-4 cm pieces. Wash spring onions, trim ends, and slice thinly.

Peel the garlic and press into a bowl. Whisk in yogurt, vegetable broth, lemon zest, and juice. Season with sugar, salt, and pepper. Fold in potatoes, cucumber, spring onions, and herbs. Taste and adjust seasoning. Serve garnished with chives flowers.
