Ingredients

  • 700 g potatoes
  • Salt
  • 1 tbsp potato starch
  • 100 g flour (Type 405)
  • 1 egg
  • 1 tbsp softened butter
  • 4 tbsp whipping cream
  • Pepper
  • nutmeg
  • 2 tbsp clarified butter

    Heat clarified butter in a pan. Cook the cakes on both sides over medium heat for about 3–4 minutes per side until golden brown.
