- 700 g potatoes
- Salt
- 1 tbsp potato starch
- 100 g flour (Type 405)
- 1 egg
- 1 tbsp softened butter
- 4 tbsp whipping cream
- Pepper
- nutmeg
- 2 tbsp clarified butter
