Potato and Kassler Stew with Broccoli

Ingredients

  • 1 onion
  • 500 g waxy potatoes
  • 500 g broccoli
  • 300 g kassler (boneless)
  • 2 tbsp olive oil
  • Salt
  • ground pepper
  • 1 bay leaf
  • 400 ml Vegetable broth
  • 50 g heavy cream (or crème fraîche)
  • 1 tsp fresh thyme
  • 1 tsp small basil

Instructions

    Peel and finely chop the onion. Peel the potatoes and cut them into large cubes. Clean, wash, and drain the broccoli. Cut the kassler into bite-sized pieces.

    Heat the oil in a pot and brown the kassler. Add the onions and cook with them, then add the potatoes and briefly sauté. Season with salt and pepper, add the bay leaf, pour in the broth, cover, and simmer for about 15 minutes.
