Ingredients

  • 4 slices pork neck roast
  • 400 g porcini mushrooms
  • 1 head garlic
  • 2 onions
  • 1 bunch thyme
  • 2 tbsp honey
  • 2 tbsp butter
  • 2 tbsp oil
  • juice and zest of half a lemon
  • Salt
  • ground pepper

Instructions

    Wash the meat, pat dry, and place on an oiled baking tray.

    Clean the mushrooms; leave whole or halve depending on size.

    Halve the garlic head. Peel and quarter the onions. Place everything on the tray. Drizzle the meat with 1 tbsp honey.

    Bake in a preheated oven at 200°C (400°F) for about 4 minutes until golden brown. Remove the tray, flip all items, mix together, and drizzle the remaining honey over the meat. Melt butter, combine with lemon juice and zest, then brush this mixture onto the meat and mushrooms. Season with salt, pepper, add half the thyme. Bake another 4-5 minutes to finish.

    Remove from the tray and transfer to a baking dish. Serve garnished with the remaining thyme.
