Pork Tenderloin Steak with Vegetable Sauce

- 4 pork tenderloin steaks (150 g each)
- Salt
- Pepper (freshly ground)
- 800 g ripe tomatoes
- 1 small onion
- 1 Garlic clove
- 2 small carrots
- 1 tsp sugar
- cold-pressed olive oil
- balsamic vinegar
- freshly grated nutmeg
- mixed leaf salad (as desired, washed and dried)

Wash the tomatoes, blanch them briefly, peel, halve, core, and cut into small pieces. Peel the carrots and dice very finely. Peel the garlic and slice it lengthwise once. Heat 2 tbsp oil and sauté the onion until translucent. Add the carrots and continue sautéing. Add the tomato pieces and garlic, cover, and simmer over medium heat for about 5 minutes, stirring frequently to prevent sticking. If needed, add 2 tbsp water. Season with salt, pepper, sugar, and nutmeg.

Wash and pat dry the pork steaks. In a heavy pan without added fat (as on a hot plate), sear each side for 2-4 minutes. Remove from the pan, season with salt and pepper, and drizzle with 1 tbsp olive oil per steak.

Make a vinaigrette by whisking together 2 tbsp olive oil, 1 tbsp vinegar, salt, and pepper; toss with the leaf salad.

Plate the steaks with the tomato sauce and salad, and serve immediately.
