Pork Neck with Marinade

Ingredients
- 10 g ginger
- 1 clove garlic
- 0.5 tsp cumin seeds
- 0.5 tsp Coriander seeds
- 1 handful coriander leaves
- 150 g ketchup
- 2 tbsp Lime juice
- 1 tsp maple syrup
- 2 tbsp sweet chili sauce
- Salt
- Pepper (freshly ground)
- 4 pork chops (220 g each, boneless)

Peel the ginger and garlic and finely chop them together. Toast the cumin and coriander seeds in a hot pan without oil until fragrant, then remove and crush them in a mortar. Rinse the coriander leaves, shake dry, and finely chop. In a bowl combine ketchup, lime juice, maple syrup, sweet chili sauce, crushed spices, coriander, garlic, and ginger; mix well and season with salt and pepper.

Rinse the pork, pat dry, and brush both sides with the marinade. Cover and let marinate at room temperature for about 2 hours.

Grill over medium heat for 12-15 minutes on a hot grill, turning occasionally. Let rest briefly before serving with remaining marinade.
