Ingredients

  • 4 Pork fillet medallions (pre‑cut, 150 g each)
  • Salt
  • Pepper (freshly ground)
  • 2 tbsp Vegetable oil
  • 400 g kumquats
  • 1 untreated lime
  • 1 untreated orange
  • orange juice
  • 2 tbsp butter
  • 2 tbsp honey
  • 20 ml orange liqueur

    Preheat the oven to 160°C (325°F) with both top and bottom heat.

    Wash, pat dry, season the pork medallions with salt and pepper, then sear them in a hot pan with oil on all sides. Transfer to the preheated oven and cook for about 10 minutes.
