Poppy Seed Loaf

Ingredients
- 400 g flour
- 60 g soft butter
- 50 g sugar
- 250 g poppy seed paste
- 1 fresh yeast
- 1 egg
- 125 ml lukewarm milk
- 1 tsp lemon zest
- Salt
- 2 tbsp powdered sugar

Dissolve the yeast in the milk, add 1 tsp sugar and let rest for about 10 minutes. On a work surface combine flour, lemon zest, egg, butter, sugar, salt and the yeasted milk to knead into a smooth dough. Cover and let rise in a warm place for about 30 minutes until doubled in volume.

Roll the dough into a rectangle (about 30x20 cm) and spread the poppy seed mixture over it. Roll up the dough, cut it in half lengthwise, then twist the two ends together with the cut sides facing up.

Place on a baking tray lined with parchment paper, cover and let rest again for about 30 minutes in a warm place. Bake the loaf at 190°C fan (no preheat) for approximately 30-40 minutes. Let cool. Mix powdered sugar with a little water and brush the loaf with this glaze.
