Poppy Seed Cake

Ingredients
- 500 g flour
- 21 g yeast (0.5 cube)
- 250 ml lukewarm milk
- 100 g sugar
- 50 g softened butter
- 250 g poppy seed mix
- 100 g chopped pistachios
- 50 g Raisins
- 150 g powdered sugar
- 3 tbsp Lemon juice
- 100 g chopped pistachios
Instructions

Whisk yeast with a little sugar in the lukewarm milk until smooth, then combine with flour, remaining sugar and butter; knead into dough using the mixer’s beaters. Cover and let rise in a warm place for about 30 minutes.

Mix the poppy seed mix with pistachios.

Soak raisins in a small amount of lukewarm water.

Knead the yeast dough on a floured surface, roll into a large rectangle, cut a strip for the pan edge, and line the greased pan’s edge with it.

Spread the poppy seed mixture and raisins over the dough, smooth, roll from the long side, and cut into ~4 cm wide pieces.

Place the dough rolls upright in the pan and let rise for about 30 minutes.

Bake in a preheated oven at 200°C for 40 minutes, remove, allow to cool slightly, then take out of the pan and let cool completely.

For serving whisk powdered sugar with lemon juice until smooth, fill into a freezer bag, cut a small tip, decorate the cake edge, and sprinkle with pistachios.
