Poppy Seed Cake

Ingredients
- 4 eggs
- 150 g sugar
- 1 pinch salt
- 250 g poppy seed mix
- 100 g flour
- 0.5 sachet baking powder
- 500 ml whipping cream
- 3 sachets stabilizer
- 1 sachet vanilla sugar
- 200 g marzipan base
- 3 tbsp poppy seeds

Separate the eggs. Beat the whites with a pinch of salt until stiff peaks form, then fold in the yolks. Sift flour and baking powder over the mixture and combine with the poppy seed mix. Pour the batter into a parchment-lined pan. Bake in a preheated oven at 180°C fan-forced for about 30-35 minutes until golden brown.

Let it cool in the pan, then remove and cut crosswise once.

Beat the cream with vanilla sugar and stabilizer until stiff. Slice marzipan thinly and line the bottom of the cake with it. Spread half of the whipped cream over the marzipan. Place the second layer on top and spread the remaining whipped cream over the whole cake, decorating with cream pearls (pipe bag with a serrated tip) as desired. Sprinkle poppy seeds and serve.
