Plum Cake with Almond Flakes

- 20 g yeast (½ cube)
- 1 tbsp sugar
- 200 ml lukewarm milk
- 400 g wheat flour
- a pinch of salt
- 1 egg
- 100 g sugar
- 75 g melted butter
- 2 kg plums
- powdered sugar
- 125 g room-temperature butter
- 125 g wheat flour
- 75 g ground almonds
- 100 g sugar
- a pinch of salt
- 1 packet vanilla sugar
- 70 g almond flakes

Preheat the oven to 200°C.

Dissolve the yeast and 1 tbsp sugar in the milk, cover and let sit for 15 minutes. Mix half the flour, salt, egg, and 75 g sugar with the yeast mixture and melted butter. Gradually knead in the remaining flour. Cover the dough and let rise for about 50 minutes.

Wash, halve, and pit the plums. Knead the dough again until smooth. Grease a baking sheet with butter and roll out the dough onto it. Arrange the plums on top of the dough like roof tiles.

For the streusel, mix softened butter, flour, almonds, sugar, and salt in a bowl. Work the mixture with two forks or an electric mixer in a crisscross motion until crumbly streusel forms. Sprinkle almond flakes over the mixture. Spread the streusel over the plums and bake in the preheated oven for about 45 minutes.

Dust the finished cake with powdered sugar and serve warm, accompanied by whipped cream.
