Pizza with zucchini and bell pepper by Spoonsparrow: Nothing beats a freshly baked, crispy pizza straight from the oven—now make it quickly at home!

Ingredients

  • Oil (for greasing the trays)
  • 75 g freshly grated parmesan
  • 75 g freshly grated Gouda
  • 1 cube fresh yeast
  • 600 g flour
  • 1 tsp salt
  • a pinch of sugar
  • 3 tbsp olive oil
  • flour (for the work surface)
  • 4 medium zucchini
  • 2 yellow bell peppers
  • 2 large red onions
  • 100 g green pitted olives (optional stuffed)
  • 6 sprigs Thyme
  • 2 Garlic cloves
  • 400 g diced tomatoes (canned)
  • 5 tbsp olive oil (for frying and drizzling)
  • 1 tsp Dried oregano

Instructions

    For the dough, dissolve the yeast in 300 ml lukewarm water. Mix the flour with salt and sugar, place in a bowl, create a well in the center, pour in the yeast mixture and oil. Knead by hand or with an electric mixer until smooth. If too wet, add more flour; if too dry, add more warm water. On a floured surface knead vigorously for about 10 minutes, cover, and let rise in a warm place for ~1 hour.

    Wash, trim, and slice the zucchini into thin rounds or shave them.

    Wash the bell peppers, halve, seed, and dice. Peel the onions and cut into thin strips. Drain the olives well and slice them.

    Rinse the thyme, shake dry, and strip leaves from stems.

    For the tomato sauce, peel and finely chop the garlic. Sauté in 1 tbsp hot olive oil until translucent. Add tomatoes, season with salt, pepper, oregano, and simmer for about 5 minutes over medium heat. Remove from heat and let cool.

    Preheat the oven to 200°C (392°F) with upper and lower heat.

    Knead the dough again briefly, divide into four equal portions, roll each into a pizza shape, and line greased trays. Shape slightly thicker edges. Spread tomato sauce over the dough, arrange zucchini rounds in a tiled pattern around the center, scatter bell pepper cubes and onion strips on top. Sprinkle cheese, season with salt, pepper, thyme, drizzle olive oil, and bake for 20-25 minutes.

    Five minutes before baking ends, distribute olive slices over the pizzas to warm them. Remove from oven and serve sliced.
