Pistachio Turkey Meatballs

Ingredients
- 2 slices of toast bread
- 8 tbsp heavy cream
- 1 onion
- 1 tbsp butter
- 400 g turkey breast fillet
- 100 g mortadella
- 1 egg (medium size)
- Salt
- ground pepper
- 60 g chopped pistachios
- 6 tbsp oil for frying
- 125 ml sweet and sour sauce

Dice the toast bread and mix with the cream. Peel and finely dice the onion. Heat butter and sauté the onion until translucent.

Coarsely dice the turkey breast fillet and mortadella, then combine with the toast mixture; pulse in a food processor or grind through a fine meat grinder. Add onion and egg, season with salt and pepper, and fold in 50 g pistachios.

Shape the dough into balls. Heat oil in a non‑stick pan. Fry the meatballs around for about 8–10 minutes until golden brown.

Drain the meatballs on kitchen paper. Mix the remaining pistachios into the sweet & sour sauce. Plate everything together.
