Pistachio Cookies

The pistachio cookies from Spoonsparrow are perfect for Christmas. Delicious and with an intense nutty aroma.

Ingredients

  • 150 g finely ground pistachios
  • 200 g butter
  • 150 g coconut blossom sugar
  • 1 split vanilla pod
  • 1 egg
  • 1 pinch salt
  • 150 g spelt flour
  • cocoa powder
  • Hail sugar

Instructions

    Combine ground pistachios with butter, coconut blossom sugar, vanilla essence, egg, salt and spelt flour; wrap dough in plastic wrap and refrigerate for 30 minutes.

    Roll dough into 3–4 mm thick sheets. Cut out circles with wavy edges (5–6 cm diameter) and place on parchment-lined baking sheet. Bake in preheated oven at 180 °C (fan 160 °C; gas: level 2–3) for about 10–12 minutes.

    Remove pistachio cookies and let cool. Decorate with cocoa powder and hail sugar as desired.
