Ingredients
- 150 g dried fig
- 200 g spelt whole‑grain flour
- 150 g wheat whole‑grain flour
- 0.5 tsp Baking powder
- 1 tsp gingerbread spice
- 80 g coconut blossom sugar
- 1 tsp vanilla powder
- 1 egg
- 150 g butter (room temperature)
- 80 g pine nuts
Instructions

Dice the figs into small cubes. In a bowl mix both flours, baking powder, gingerbread spice, coconut blossom sugar and vanilla powder. Add the egg, diced figs and butter, then knead with the dough hooks of a hand mixer until smooth.

Using a small spoon, scoop portions from the dough and roll them into balls. Roll each ball in pine nuts, pressing gently to coat. Place on two parchment‑lined baking sheets with some space between, and bake in a preheated oven at 175 °C (160 °C fan; gas: level 2–3) for 15–18 minutes. Cool on a wire rack.
