Pike Perch Fillet on Fried Rice with Peanuts

Ingredients
- 4 pieces pike perch fillet (about 150 g)
- 500 g cooked rice
- 2 shallots
- 2 Garlic cloves
- 1 chili pepper
- 2 tbsp coarsely chopped parsley
- 4 tbsp peanut oil
- 4 tbsp chopped peanuts
- Salt
- pepper (ground)
Instructions

Wash the pike perch, pat dry and lightly score the skin.

Peel and chop the shallots and garlic. Wash the chili pepper and slice into rings. Sauté together with the shallots and garlic in 2 tbsp hot oil, add the rice and 2 tbsp peanuts, stir and fry for about 4 minutes. Finally add parsley and season with salt and pepper.

Season the fish with salt and pepper and pan‑fry skin side down in remaining oil for about 3 minutes until golden brown. Flip and cook the other side for about 2 minutes.

Distribute the rice into bowls, place a piece of pike perch on top of each and sprinkle with the remaining peanuts before serving.
