Ingredients

  • 800 g Brussels sprouts
  • 75 g sugar
  • 125 ml white wine vinegar (or substitute with 5% brine vinegar)
  • 1 tsp peppercorns
  • 0.5 tbsp salt
  • 2 tsp dill seeds

    Remove the outer leaves of the Brussels sprouts and cut off the stems. Wash the sprouts and let them drain. In a pot bring 500 ml water, sugar, vinegar, peppercorns, salt, and dill seeds to a boil. Add the Brussels sprout heads and cook for 4-6 minutes until very firm.

    Place the Brussels sprouts in hot-washed mason jars (½ L capacity). Fill with the cooking liquid until the sprouts are completely covered. Seal the jars and let them cool standing upside down.
