Ingredients
- 1 kg fresh black radishes
- 2 red onions
- 1 tsp peppercorns
- 1 tsp mustard seeds
- 2 sprigs sage
- 2 sprigs thyme
- 650 ml vegetable broth
- 150 ml white wine vinegar

Peel the onions and slice them thinly. Wash the black radishes, scrub them thoroughly, peel them, and blanch them in boiling salted water with a pinch of sugar for 5 minutes.

Drain, cool in cold water, drain, and cut into 3 cm long pieces. Place the pieces with the onions, pepper, mustard, and herbs in preserving jars.

Bring the broth and vinegar to a boil and pour over the vegetables. Close the jars tightly and let them cool. Store in a cool, dark place and let them infuse for about 3 days.
