Pickled Bell Peppers in Oil

Ingredients

  • 6 bell pepper pods (yellow, red and green)
  • 3 Garlic cloves
  • 1 handful thyme
  • 1 lemon (juice)
  • 1 tbsp freshly chopped basil
  • 1 tsp sugar
  • Salt
  • Cayenne pepper
  • 200 ml olive oil

Instructions

    Preheat the oven to grill function.

    Wash the bell pepper pods, halve them, remove seeds, stems and white membranes, and place them on a parchment-lined baking sheet with the skin side up. Grill in the oven for about 10 minutes until the skin blisters and begins to blacken. Remove from oven and cover with a damp kitchen towel. Let cool, then peel off the skin.

    Cut the pieces into fine strips and put them in a bowl. Peel and dice the garlic. Rinse the thyme and pat dry. Mix together with the garlic, lemon juice, basil, sugar, salt and cayenne pepper and combine with the bell pepper strips. Let sit for about 10 minutes and fill prepared jars. Top with oil until everything is covered.

    Place in the refrigerator and let it rest for at least 2 hours before serving.
