Pho Bo with chili, beef, bean sprouts, and Thai basil – a true soul‑warmers from Vietnamese cuisine!

Ingredients

  • 600 g flat rice noodles
  • 1 l clear meat broth
  • 4 tbsp hoisin sauce
  • 200 g beef steak (cut into very thin strips)
  • 4 limes
  • Salt
  • Pepper
  • 160 g bean sprouts
  • 1 coriander stalk
  • 1 stalk Thai basil
  • 1 parsley sprig
  • 2 red chili peppers

Instructions

    Bring plenty of salted water to a boil in a pot. Cook the noodles for 3 minutes, drain, rinse with cold water and set aside.

    Wash the herbs, shake off excess moisture and pluck the leaves. Wash the chilies, dry them, deseed and slice into rings. Mix bean sprouts, coriander leaves, Thai basil leaves, parsley leaves and chili.

    Bring the meat broth to a boil. Add hoisin sauce and season with salt and pepper. Distribute the herb mixture and noodles into four small bowls and pour the hot broth over them.

    Layer the beef on top of each bowl and drizzle with the juice from half a lime. Serve Pho Bo with the remaining lime halves.
