Pesto Pasta Salad

Ingredients
- 70 g pine nuts
- 50 g basil
- 100 g fresh young spinach
- 1 Garlic clove
- Sea salt
- 100 g freshly grated Parmesan (or Pecorino)
- 100 ml olive oil
- black pepper (freshly ground)
- 500 g farfalle
- olive oil (as desired)
Instructions

Slowly toast the pine nuts in a dry pan until lightly browned. Remove and let cool.

Rinse the basil and spinach, shake off excess water, and tear the leaves. Peel the garlic. In a blender combine half the pine nuts, basil, half the spinach, and Parmesan (leave about 3 tbsp). Gradually pour in the olive oil until a smooth pesto forms. Season with salt and pepper.

Cook the pasta in plenty of boiling salted water to al dente. Drain, rinse under cold water, and let drain. Mix the warm pasta with the remaining pesto and spinach. Serve the salad warm or chilled on bowls. Sprinkle with the remaining pine nuts and Parmesan.

Optionally drizzle a few drops of olive oil for extra flavor.
