Ingredients
- 600 g beef fillet (pre‑cut, center cut)
- 4 tbsp mixed peppercorns
- 2 tbsp Rapeseed oil
- Salt

Wash the meat, pat dry, remove fat and sinews, divide into four equal pieces and lightly flatten. Crush the peppercorns in a mortar and rub them onto the meat. In a hot pan, sear the meat all around with oil, then finish cooking in a preheated oven at 120 °C (fan: 100 °C; gas: lowest setting) for 30–40 minutes until done.

Remove the steaks from the oven, season with salt and serve on warmed plates with fries if desired.
