Ingredients

  • 30 g lemon zest
  • 2 Eggs
  • 250 g sugar
  • 1.5 tsp cinnamon
  • 0.5 tsp ground allspice
  • nutmeg (¼ tsp each)
  • cardamom (¼ tsp each)
  • ground pepper (¼ tsp each)
  • 250 g flour
  • 1 tsp Baking powder
  • baking paper (for the tray)

Instructions

    Finely chop the lemon zest. Beat the eggs with sugar until frothy. Mix in the lemon zest, cinnamon, allspice, nutmeg, pepper, cardamom, flour and baking powder. Quickly knead into a smooth dough with the egg mixture. Wrap in cling film and refrigerate for 30 minutes. Line baking trays with paper. Form walnut‑sized balls from the dough and place on the tray. Let dry for 12 hours. Preheat the oven. Lightly dampen the bottom of the cookies. Bake in a preheated oven at 180°C (middle rack) for 15–20 minutes, until the balls crack. Remove from the tray with paper and cool.
