Penne with Beans, Mushrooms and Bacon

Ingredients

  • 400 g fresh chanterelles
  • 280 g green beans
  • Salt
  • 2 sprigs thyme
  • 400 g penne
  • 2 cloves garlic
  • 200 g breakfast bacon (sliced)
  • 2 tbsp butter
  • black pepper (ground)

Instructions

    Clean the chanterelles thoroughly. Rinse the beans in a sieve, trim them and blanch in boiling salted water for 6-8 minutes. Drain, shock with cold water and let drain well.

    Cook the pasta in boiling salted water until al dente. Drain and set aside.

    Cut the bacon into cubes and brown in a pan with 1 tsp butter. Remove and sauté the mushrooms for 3-4 minutes, stirring. Add thyme and finish with remaining butter. Toss the beans together with the pasta and bacon, seasoning with salt and pepper before serving.
