Pear and Fruit Roast Chicken

- 1 roast chicken (ca. 1,4 kg)
- Salt
- black pepper (freshly ground)
- 4 sprigs Rosemary
- 4 stems thyme
- 80 g soft butter
- 8 small pears
- 250 g dates
- 1 tbsp honey
- 2 tbsp Orange juice

Rinse the roast chicken and pat dry. Season the inside with salt and pepper. Rinse the herbs, shake dry and set aside a few for garnish. Stuff the rest into the chicken and tie the legs with kitchen twine. Place breast side up in a buttered roasting tin. Melt the remaining butter in a small pot, season with salt and pepper, and brush over the chicken. Roast in the oven for about 70 minutes, basting with butter every so often and adding a splash of water if needed.

Peel the pears and remove the cores. During the last ~20 minutes, scatter them with dates around the chicken. Add honey and orange juice to the butter and brush onto the chicken and pears.

For serving, arrange everything on a platter (remove twine and herbs) and garnish with the remaining fresh herbs.
