- 300 g peas
- Salt
- 1 Garlic clove
- 2 tbsp olive oil
- 2 tbsp lemon juice
- black pepper (ground)
- 2 Tomatoes
- 4 slices wheat bread
- mint (for garnish)

Blanch the peas in boiling salted water for about 5 minutes, drain, rinse with cold water and let them dry. Smash the peas finely with a fork or pulse slightly with an immersion blender. Peel the garlic and squeeze it into the mixture. Mix in the olive oil and lemon juice, season with salt and pepper.

Wash the tomatoes, cut off the stem ends and slice them. Spread the pea spread on the bread slices and top with tomato slices. Serve garnished with mint.
