Ingredients

  • 100 g green dried peas
  • 100 g yellow dried peas
  • 1 l meat broth
  • 2 carrots
  • 0.25 head of celeriac
  • 2 Potatoes
  • 2 Bay leaves
  • 3 peppercorns
  • 2 tbsp butter
  • 2 tbsp flour
  • Salt
  • black pepper (freshly ground)
  • 1 tbsp dried marjoram
  • 500 g meat sausage
  • 1 tbsp Vegetable oil

Instructions

    Rinse the peas and soak them overnight in the meat broth. The next day peel and dice the vegetables. Bring the peas to a boil in the broth, add the spices and vegetables, and simmer over medium heat for 45–50 minutes.

    Melt the butter in a pan, whisk in the flour, let it brown slightly, then stir in a bit of soup, mix well, and pour back into the remaining soup. Season with salt, pepper, and marjoram, letting it thicken. Slice the sausage diagonally and sear both sides in a hot grill pan with oil. Ladle the soup into bowls, top each with three sausage slices, and garnish with freshly chopped parsley.
