Pea Potato Curry

Pea potato curry is a perfect after-work recipe – quick to make, healthy and made with fresh ingredients.

Ingredients
- 300 g starchy boiling potatoes
- 300 g sweet potatoes
- 1 onion
- 3 Garlic cloves
- 2 tbsp sprouting oil
- 400 ml Vegetable broth
- 200 ml heavy cream
- Salt
- Pepper (freshly ground)
- 2 tbsp Curry Powder
- 150 g peas (frozen)
- 2 tbsp chopped parsley
Instructions

Peel, wash and cut the potatoes into bite‑size cubes. Peel and finely dice the onion and garlic.

Heat the oil in a pan and sauté the potatoes with the onion and garlic for about 5 minutes. Add the vegetable broth and cream, season with salt, pepper and curry powder, then simmer for 20–25 minutes over medium heat.

Wash and drain the peas, stir them into the curry and warm through briefly. Taste, plate and sprinkle with parsley.
