Pea Cream Soup with Mint

Ingredients

  • 1 large potato
  • 1 onion
  • 1 tsp Rapeseed oil
  • 500 g peas (frozen)
  • 800 ml vegetable broth
  • Salt
  • Pepper
  • 0.5 bunch mint
  • 100 g Sour cream

Instructions

    Wash the potato, dry and grate it, peel and cut into small cubes. Peel and finely chop the onion.

    Heat oil in a pot. Sauté onion and potato over medium heat for 5 minutes. Add peas and broth. Season with salt and pepper and simmer covered on low heat for about 15 minutes. Meanwhile wash mint, shake dry and finely chop the leaves.

    Blend the soup until smooth. Mix in salt, 3 tbsp sour cream and mint. Then ladle the finished pea cream soup into four bowls, garnish with remaining sour cream and season with pepper.
