Pea Asparagus Soup with Rice

- 100 g basmati rice
- Salt
- 800 g green asparagus
- 400 g peas
- 1 Garlic clove
- 2 tbsp olive oil
- 750 ml vegetable broth
- 1 handful basil
- nutmeg

Wash the rice and cook it in double the amount of salted water for about 25 minutes.

Peel the lower third of the asparagus, cut the stalks lengthwise, trim the tips, and chop the remaining pieces. Rinse and drain the peas. Peel and mince the garlic, then sauté with the chopped asparagus and half the peas in hot oil for 1-2 minutes. Deglaze with broth and simmer gently for about 15 minutes.

Add the drained basil leaves and blend finely. Strain through a sieve and bring to a boil. Add the remaining peas and asparagus tips, letting them cook for about 5 minutes. Finally stir in the cooked rice, season with salt and nutmeg, and serve.
