Pastry Fruit Tartlets

Ingredients
- 1 pack of puff pastry (6 squares)
- 1 ripe Mango
- 2 Kiwis
- 0.5 l milk
- 1 vanilla pod
- 5 egg yolks
- 100 g sugar
- 30 g flour
- 1 pinch salt
- powdered sugar
Instructions

Let the puff pastry thaw side by side, then cut each square in half lengthwise.

Peel the fruit; slice the mango into wedges and halve the kiwis lengthwise before slicing them into rounds.

For the custard, split the vanilla pod lengthwise, scrape out the seeds and stir both the seeds and pod into the milk, bringing it to a boil.

Whisk the egg yolks with sugar in a bowl until creamy, then fold in the flour.

Pour the boiling milk into the yolk mixture, return everything to the pot, remove the vanilla pod, and simmer over low heat while constantly whisking until it thickens slightly.

Strain the custard through a sieve, let cool, sprinkling a thin layer of sugar on top to prevent skin formation.

Spread some custard onto each pastry square, fold the corners gently, and bake in a preheated oven at 180°C for about 20 minutes until golden yellow.
