Pasta with Vegetable Sauce

Healthy pasta enjoyment for young and old – pasta with vegetable sauce from Spoonsparrow!

Ingredients

  • 350 g Whole wheat pasta
  • 60 g Shallots (2)
  • 200 g Carrots (2)
  • 150 g Parsnips (1 small)
  • 250 g Zucchini (1)
  • 40 g Rapeseed oil (4 tbsp)
  • 400 g Tomatoes (6)
  • 30 g Walnuts (2 tbsp)
  • 10 g basil (0.5 bunch)
  • 20 g Lemon juice (2 tbsp)

Instructions

  1. 1.

    Cook pasta in plenty of boiling water according to package instructions. Then drain.

    Meanwhile, peel, clean and cut shallots, carrots and parsnips into small pieces. Wash, pat dry, clean and also cut zucchini into small pieces.

    Heat oil in a pot and sauté the vegetables over medium heat for 5 minutes.

    Meanwhile, wash, halve, remove the seeds from and cut tomatoes into small pieces. Chop walnuts. Add tomatoes and nuts to the pot and simmer for 2-3 minutes. Pour in 250 ml of water and simmer gently for about 15 minutes.

    Wash, shake dry and finely chop basil. Remove vegetables from heat and puree very finely with a hand blender so that no pieces remain (Caution: choking hazard).

    Season the vegetable sauce with basil and lemon juice and serve with pasta.
