Ingredients

  • 400 g penne
  • Salt
  • 600 g fresh leaf spinach
  • 2 cloves garlic
  • 1 Shallot
  • 2 tbsp olive oil
  • 50 ml dry white wine
  • 250 ml heavy cream (at least 30% fat)
  • black pepper (freshly ground)
  • nutmeg
  • 200 g cottage cheese

    Cook the penne in boiling salted water for 15-20 minutes until al dente. Meanwhile, clean and rinse the spinach, then dry it thoroughly. Peel the garlic cloves and shallot; dice the shallot into small cubes and slice the garlic thinly.

    Heat the olive oil in a pot and sauté the garlic until golden yellow. Add the shallot and spinach, cooking until the spinach wilts slightly, then deglaze with white wine and cream. Simmer for about 5 minutes over medium heat, seasoning with salt, pepper, and nutmeg to taste.

    Drain the cooked pasta and fold it into the spinach sauce, tossing briefly. Serve on preheated plates, sprinkling cottage cheese on top.
