Ingredients

  • 500 g wild rabbit meat (boneless)
  • 2 onions
  • 2 carrots
  • 2 stalks celery
  • 3 tbsp oil
  • 250 ml wild stock (glass)
  • 300 ml red wine
  • 2 tbsp grated dark chocolate
  • nutmeg
  • 1 tsp clove powder
  • 1 tsp dried thyme
  • Salt
  • pepper (ground)
  • 400 g pappardelle

Instructions

    Cut the rabbit meat into small cubes.

    Peel onions and carrots, clean and wash celery. Cut all into small cubes as well.

  3. 3.

    Sauté onion cubes in a pot with hot oil, add vegetables and meat, brown them, then pour in stock and red wine, add spices. Cover and simmer for about 1½ hours. Stir in dark chocolate and adjust seasoning again.

    Cook the pasta in plenty of salted water according to package instructions until al dente, drain, let it rest, and mix with the sauce.
