Ingredients
- 350 g Penne
- 125 g arugula
- 1 bundle basil
- 1 bundle parsley
- 60 g pine nuts
- 100 g grated Parmesan
- 50 ml Chicken stock
- Salt
- Pepper (freshly ground)
- nutmeg
- 1 smoked Mozzarella
Instructions

Wash, dry, and shake off the arugula, basil, and parsley; remove leaves from stems. Blend the leaves with pine nuts and parmesan, adding chicken stock until a smooth, pale green sauce forms. Season with salt, pepper, and nutmeg.

Cook penne in plenty of boiling salted water to al dente, drain, and mix with the pesto sauce.
