Ingredients
- 6 tomatoes
- 100 g breakfast bacon (sliced)
- 200 g champignons
- 1 onion
- 1 Garlic clove
- 400 g spaghetti
- Salt
- 1 tbsp Olive Oil
- 150 ml dry white wine
- pepper (ground)
- 2 tbsp freshly chopped parsley

Blanch the tomatoes, shock them in cold water, peel, quarter, deseed and dice. Cut the bacon into strips. Clean the champignons and slice them. Peel and finely dice the onion and garlic.

Cook the pasta in salted water until al dente.

Sauté the bacon briefly in hot oil. Add the onion and garlic and cook 1-2 minutes. Add the champignons and cook another 1-2 minutes. Deglaze with wine and stir in the tomatoes. Simmer for about 8 minutes. Season with salt and pepper.

Toss the drained pasta with parsley into the sauce and serve.
