Ingredients
- 400 g mushrooms (e.g., porcini)
- 1 handful young spinach
- 1 onion
- 1 Garlic clove
- 1 tbsp butter
- 100 ml dry white wine
- 200 ml whipping cream
- Salt
- Pepper (freshly ground)
- 400 g penne

Clean the mushrooms and leave whole or cut into pieces depending on size. Wash, trim, and spin the spinach dry. Peel and finely dice the onion and garlic. Sauté together in hot butter until translucent. Add the mushrooms and cook until golden brown. Swirl in the spinach and pour in the wine. Bring to a boil and stir in the cream. Season with salt and pepper and simmer gently for about 10 minutes until slightly thickened.

Cook the pasta in salted water al dente. Drain well, toss with the sauce, taste, and serve.
