Pasta with Herb Sauce

Ingredients
- 25 g pine nuts
- 25 g cashew kernels
- 80 g basil
- 2 Garlic cloves
- 1 Shallot
- 100 ml olive oil
- Salt
- Pepper (freshly ground)
- a splash lemon juice
- 400 g penne

Roast the pine nuts and cashews in a pan until golden brown and fragrant. Remove and let cool.

Rinse the basil, shake dry, pluck the leaves, and set aside a few for garnish. Peel and finely chop the garlic cloves and shallot. Pulse the basil, nuts, garlic, and shallot in a food processor or blender until finely minced, gradually adding olive oil until a creamy pesto forms. Season with salt, pepper, and lemon juice.

Cook the pasta in boiling salted water al dente. Drain, reserving some cooking water. Toss the pasta with the pesto and a splash of reserved water if needed, adjust seasoning, and serve garnished with basil.
