Ingredients

  • 2 shallots
  • 1 Garlic clove
  • 500 g Green Asparagus
  • 400 g spaghetti
  • Salt
  • 2 tbsp butter
  • 20 g fresh horseradish
  • 1 tsp lemon juice
  • 200 ml vegetable stock (glass)
  • 100 g mascarpone (at least 80% fat content)
  • pepper (ground)
  • 1 bowl watercress
  • horseradish strips for garnish

Instructions

    Peel and finely chop the shallots and garlic. Wash the asparagus, trim 1 cm from the ends and peel thinly if necessary. Cut the asparagus diagonally into pieces about 5 cm long.

    Cook the spaghetti in plenty of salted water according to package instructions until al dente.

    Heat the butter in a large non-stick pan and sauté the shallots with the garlic. Peel and grate the horseradish, then mix immediately with lemon juice. Add the asparagus and pour in the vegetable stock; heat through. Drain the pasta, add it to the sauce, stir in the horseradish mixture and mascarpone, and season with salt and pepper.

    Chop the watercress and bundle it with the horseradish strips. Plate the pasta on a hot platter and garnish with the watercress bundles before serving.
